Michael Perrin, a self-taught chef and former marine biologist, pays his culinary debt to California food maven Alice Waters by sourcing organic, locally grown, sustainable meats and produce at this 20-year-old destination restaurant set in a restored 1905 cottage in Jensen Beach. Perrin and his wife and mother keep a small garden at the restaurant, serve grass-fed beef and wild game and organic salmon, and find the best locally caught seafood available. You pay, of course, for these fine ingredients -- all of the entrées are more than $30, and a Black Angus prime tenderloin costs $45. Seafood entrées are particularly stellar, and the menu is always imaginative, if occasionally the multilayered list of ingredients seems overwrought. The setting is romantic and charming, both indoors in one of the tiny rooms, on the garden terrace, or the outdoor patio. And the drive to get there, through unspoiled piney acres and across causeways, is lovely.
