Recently renovated to the tune of $60 million, the Ritz-Carlton has had a makeover worth experiencing, if only for a pretheater cocktail and appetizer. Angle, one of three new restaurants, done up in browns and duns and golds, offers some interesting takes on American regional cuisine -- even if the squab, peekytoe crab, black truffles, and hackleback caviar come from regions other than our own. The entrées can be uneven, but many of the appetizers are worth trying, such as homemade lemon-thyme gnocchi, steak tartare with crème fraiche, breast of squab cooked rare, and hackleback caviar with brioche toast points and buckwheat pancakes. Desserts are whimsical, with a flair for unexpected pairings of flavors. Afterward, stroll through the gorgeous lobby or out to the terrace where a jazz band plays standards most nights.
