Unfussy, unpretentious, charmingly run by a small Vietnamese family, Cây Da excels in the quality of its very fresh ingredients, particularly seafood. No soup repeats its flavor profile – from the cabbage roll in clear broth to a complex hot-and-sour shrimp to a supremely chickeny chicken noodle. A house specialty, sizzling crepe, wraps a buttery rice flour pancake around fat, briny shrimp, crunchy bean sprouts, and loamy mushrooms. Grilled beef in lá lốt (betel leaves) hides a mouthful of smoky minced meat flavored with lemongrass and garlic inside a strange and vegetal package reminiscent of briny tobacco, a lot tastier than it might sound. Whole grilled fish of the day, napped with ginger sauce, bursts with piscine flavor. Reasonable prices keep regular customers returning.
